A balanced diet, full of vital nutrients, calories and protein, is essential for those with Cerebral Palsy. Combined with cannabis, which has shown to be an effective treatment and aid for those with the condition, a “healing” recipe is created. The following recipe for honey, lemon chicken with brown rice is a balanced and nutritious meal infused with cannabis.
Serves 4
INGREDIENTS:
- 2 lbs. boneless chicken breast (butterflied into thinner cutlets)
- 4 tablespoons of organic clover honey
- 5 cloves of garlic (finely minced)
- 1/2 cup fresh parsley (chopped)
- 2-3 lemons juiced (yielding 1/2 cup of lemon juice)
- the zest of 1 lemon
- 1/2 cup cannabis-infused extra virgin olive oil
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 2 cups brown rice (cooked)
- Optional garnishes: fresh parsley, fresh rosemary, etc.
PREPARATION:
To begin, prepare the 2 cups of brown rice according to the directions on the packaging. Once cooked, set the brown rice to the side until it is ready to eat.
Next, ignite and preheat the grill to a medium-high heat (if an outdoor grill is not an option, feel free to follow the directions below for pan-searing).
After, zest 1 lemon, and then juice the remaining lemons over a glass/pyrex measuring cup, until 1/2 cup of freshly squeezed lemon juice is acquired. Toss any seeds that may have fallen in during juicing.
Next, finely mince the 5 garlic cloves (or press them using a garlic press) and add the finely minced garlic to the measuring cup containing the lemon juice.
Then, add the seasonings (salt, pepper, cayenne pepper, and parsley) to the measuring cup containing the lemon juice and garlic. Slowly whisk in the cannabis-infused olive oil, continuing to whisk the marinade until it creates an emulsion.
Pour the marinade into a large gallon-size freezer bag, or into a large storage container (large enough to fit all of the raw chicken). If desired, save about 1/3 cup of the marinade, setting it to the side until ready to use it for basting during the grilling process. Never baste food with the marinade that has been directly in contact with the raw poultry or meat.
If planning on pan-searing, it is recommended that all of the marinade be used over the raw chicken at once, as any unnecessary amounts of the sauce/basting may result in burnt marinade due to the sugar content of the honey.
Next, butterfly each chicken breast to produce two thinner fillets. Repeat this util all of the chicken breasts have been sliced in half length-wise.
Add the now butterflied chicken breasts to the marinade, ensure a tight seal with a container of choice, and then proceed to shake the contents to make sure the chicken is evenly coated with the marinade.
Place the marinating chicken into the refrigerator and allow it to chill for at least 30 minutes prior to cooking, or, choose to marinade it up to 2 hours.
When ready to cook, remove the chicken from the refrigerator and spray the grill with some nonstick grilling spray. Place the pieces of chicken onto the grill and allow the chicken to cook 5 minutes on each side.
Remove the chicken from the and grill and let it rest before serving.
If choosing to pan-sear: heat up a large skillet over medium-high heat.
Add 1 tablespoon of cannabis-infused olive oil to the pan. Once heated, place the chicken in a single-layer on the bottom of the skillet. Allow the chicken to cook for 6-8 minutes (per side). After about 7 minutes, flip the chicken and continue to cook (roughly 7 more minutes) or until the center of the fillets are white and cooked throughout.
Remove the chicken from the skillet and allow it to rest while plating the brown rice.
Serve the brown rice with the honey lemon chicken, and enjoy!

I just tried this recipe without the cannabis and it’s delicious. I doubled the amount of lemon juice and garlic and used coconut oil instead of olive oil. I used fresh parsley and dried cayenne peppers out of my garden. I may have tripled the cayenne peppers. I also added about 4 table spoons of organic grass fed butter to the brown rice.
